FIDEM Estate Reserve Chardonnay
FIDEM was born of the oldest blocks on the Firetree estate. These grapes were hand harvested in the middle of the night when temperatures were at their lowest. The harvest was brought to the winery, then was whole-cluster pressed into juice. The fermentation process was conducted using two techniques: new French oak to enhance the structure and aromatics, and temperature-controlled concrete eggs to polish the acidity for a seamless texture. Following malolactic fermentation and six months on its fermentation lees, the wine was racked, blended, and aged for 14 months before light filtration and bottling.

Bunny Hills Estate Chardonnay
Bunny Hills is our flagship estate chardonnay from Firetree Vineyards. We call this wine 'bunny hills' because when our youngest daughter, Marianna, first visited the vineyard, the first animals she noticed were the wild hares bouncing around the famous rolling hills of the vineyard. Bunny Hills embodies the life on the vineyard: from the wild hares to the 200 goats and sheep that roam the property, which are vital to our sustainable present, and future!
